  • 2 large eggs
  • 1/2 C. pesto
  • 1 C. walnuts, chopped
  • 3/4 C. breadcrumbs
  • 4 turkey legs
  • 3 T. olive oil

In a medium bowl, beat the eggs and set aside. In another bowl, add the pesto. In a third bowl, combine the walnuts with the breadcrumbs. Coat the turkey legs in pesto, dip into the walnut mixture, coat in egg, and dip in the walnut mixture again. Heat olive oil in a large skillet over medium heat. Add the turkey legs to the pan and cook until golden brown. Let stand for five minutes before serving.
