Herb New Potatoes

Ingredients
- 1 1/4 lbs. sm. new potatoes
- 2 oz. sliced pancetta, diced
- 1 med. onion, chopped
- 2 Tbs. olive oil
- 1 garlic clove, finely chopped
- 6 fresh basil leaves, torn into bits
- 1 tsp. chopped rosemary
- 1 bay leaf
- salt
- pepper
Directions
Scrub potatoes and then peel them. Cut them into 1-inch pieces. Combine pancetta, onion and olive oil in a large skillet. Cook over medium heat until softened, 5 minutes. Add potatoes and cook for 10 minutes. Stir in the garlic, basil, rosemary, bay leaf and salt and pepper to taste. Cover the pan and cook for 20 more minutes. Add a bit of water if the potatoes start to brown too quickly. Remove bay leaf and serve.
