  • 5 lb. prime beef roast
  • 8 cloves garlic, minced
  • 2 T. olive oil
  • 1 tsp. thyme
  • 2 T. kosher salt
  • 2 T. coarse ground black pepper
  • 1 large onion, chopped
  • splash of red wine

In a small bowl, combine olive oil with thyme, salt, pepper, and garlic. Rub meat with mixture and let stand for 30 minutes. Meanwhile, place onions in the bottom of your crockpot and splash with red wine. Add meat and pour in enough water to cover 3/4 of the roast. Cook for eight hours on low. Slice and serve.
