Herbed Lentils and Rice

Ingredients
- 2 2/3 C. chicken broth
- 3/4 C. dry lentils
- 3/4 C. onion, chopped
- 1/2 C. raw brown rice
- 1/2 tsp. dried basil
- 1/4 tsp. salt
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. pepper
- 1 clove garlic, pressed
- 4 oz. Cheddar cheese, shredded and divided
Directions
Preheat oven to 350 degrees. Combine broth, lentils, onion, rice, seasonings, and garlic. Stir in half of the cheese. Pour into an ungreased 1 1/2-quart casserole. Bake covered for 1 1/2-2 hours, or until lentils and rice are tender. Sprinkle with remaining cheese. Bake 2-3 minutes, uncovered.
