Herbed Rustic Bread and Fresh Garden Spring Salad

This recipe is seasonal and would be terrific served with grilled chicken or fish. This makes a great light and healthy lunch and is smacked full of vitamins.

Ingredients

  • 1/2 C. rustic bread, cubed
  • 2 Tbs. extra virgin olive oil
  • 1/4 C. fresh Parmesan, shredded
  • 1/4 C. fresh herbs (basil, parsley or oregano), chopped
  • sea salt, to taste
  • fresh ground black pepper, to taste
  • 1 tomato, chopped
  • 1 green onion, chopped
  • 1 jar roasted red bell peppers, chopped
  • 1 cucumber or zucchini, chopped
  • 1 1/2 C. spring salad mix

Directions

Cut the bread into cubes and put in small mixing bowl. Put olive oil evenly on bread and quickly add cheese, herbs, salt and pepper. Mix together to coat evenly. Chop the vegetables and add them to the bread, except for the spring salad mix. Stir all ingredients together until well coated. May add more olive oil, salt and pepper, if needed. Divide the spring salad mix into two bowls and pour vegetable bread mixture over the salad.
