Holiday Almond Sugared Shortbread Cookies

- 1 C. butter
- 1/2 C. sugar
- 2 1/2 C. flour
- 2 tsp. almond extract
- 1/4 C. finely chopped almonds
Begin by preheating the oven to 300 degrees. In a medium bowl, cream butter, almonds, and sugar until light and fluffy. Add in almond extract mixing well. Add flour a little at a time, adding the rest of the flour and mixing with your hands to make a soft dough. Place dough on a cookie sheet and bake for 25-30 minutes.
