Ingredients

  • 4 T. cocoa
  • 3 eggs, beaten
  • 150 g. flour
  • 5 oz. cranberries
  • 5 oz. raisins
  • 5 oz. currants
  • 6 oz. dark brown sugar
  • 1 lemon zest
  • 3 oranges zest
  • 5 oz. unsalted butter, softened
  • 1 tsp. mixed spice
  • 175 mL. honey
  • 125 mL. espresso
  • 2 oz. cashews, chopped
  • 2 oz. almonds, chopped
  • 75 g. almonds, ground
  • ½ tsp. baking powder
  • ½ tsp. baking soda

Directions

Preheat the oven to 300 degrees. Line a cake pan with parchment paper. In a saucepan, combine the cocoa, softened butter, dry fruits, sugar, honey and espresso. Let it simmer for 10-15 minutes. Let it cool. In a large mixing bowl, combine the beaten eggs, almond powder, flour, baking powder and baking soda. Add in the saucepan mixture. Transfer the batter into the cake pan. Let it bake for 2 hours. Serve and enjoy.
