Holiday Creamed Corn

This creamed corn recipe is different and way better than just opening a can.

  • 2 Tbs. butter
  • 1/4 C. finely chopped red bell pepper
  • 1/4 C. finely chopped onion
  • 4 oz. cream cheese
  • 1/4 C. milk
  • 2 14.75-oz. cans creamed corn
  • 1 10-oz. pkg. frozen whole kernel corn
  • 1 C. shredded white cheddar cheese
  • 1/2 C. sliced green onions

Melt butter in a large saucepan add bell pepper and chopped onion. Cook until tender, add milk and cream cheese, heat and stir constantly until cream cheese is melted and well incorporated. Add both types of corn, cook for 5 minutes or until well heated. Spoon mixture into a buttered casserole dish. Sprinkle with the white cheddar and green onions. Bake at 350 for 15 - 20 min. or until hot and bubbly.
