Roast up some hazelnuts to create a classic hazelnut brittle. When done, pour over melted chocolate to make it extra rich!

1 pound


  • 1/4 C. water
  • 1 C. white sugar
  • 1/4 C. light corn syrup
  • 2 Tbs. butter
  • 2 1/2 C. unsalted hazelnuts, roasted and sliced
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 drops vanilla
  • 1/2 C. chocolate, melted

Place a large pot over medium heat. Stir in water, sugar and syrup until it boils. Use a candy thermometer to cook mixture to 250 degrees. Add butter and hazelnuts. Boil mixture to 300 degrees. Stir in baking, salt and vanilla. When smooth, pour mixture on greased baking sheet evenly. Let it cool before pouring over melted chocolate and breaking the brittle into pieces.
