Holiday Roast Duck with Mashed Potatoes

- 1 medium-sized duck
- herb butter
- 8 potatoes, washed, peeled, and cubed
- 1/2 C. sour cream
- 4 cinnamon sticks
- bay leaves
- 1/2 C. grated cheese
- salt and pepper, to taste
Boil and mash the potatoes with the sour cream and some salt and pepper.
Preheat the oven to 400 degrees. Wash and clean the duck. Use a fork to puncture the skin of the duck throughout.
Rub the herb butter all over the duck and stuff the cavity with cinnamon sticks and bay leaves. Season the duck with salt and pepper and roast for 10 minutes. After 10 minutes, turn the heat down to 375 and roast for 40 more minutes or until the internal temperature reads 165 degrees. Allow the meat to rest for 20 minutes before serving.
