Holiday Spinach Surprise

I made this up during the Christmas holiday. I was making a theme of the Christmas colors on my table, spinach being green was one of them. Well, it cooked up faster than the rest of my food. All I can say is WONDERFUL.

Ingredients

  • 3 bags fresh spinach
  • 1 1/2 C. heavy cream
  • 1 stick sweet butter
  • 1/4 lb. bacon
  • 1/2 C. sliced fresh mushrooms
  • 2 scallions (do not remove stems)
  • 1 bay leaf

Directions

Steam spinach until tender. In 2-qt. pot, melt butter. Add heavy cream and cook until blended. Add spinach and bay leaf. Simmer for 3 minutes and set aside. Chop scallions and mushrooms, and set aside. Cook bacon until a little crisp, then drain most of the grease off. Add scallions and mushrooms. Saute together until a little soft. Drain off all grease when finished. Add mixture to spinach and let simmer until thick, stirring regularly.
