  • 2 cups + 2½ tablespoons flour
  • ½ teaspoon + 1/8 teaspoon salt
  • ½ cup butter, softened
  • 4 tablespoons ice cold water
  • 9 apples, peeled, cored and sliced
  • ½ lemon, juiced
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ cup boiled cider
  • ¾ cup sugar

Mix together the flour, ½ teaspoon salt and butter until lumps form. Drizzle the ice water into the bowl and mix until dough forms. Knead it together and split into two pieces. Press each half into a flat disk, wrap in plastic wrap and refrigerate for 30 minutes. In a bowl, add the apples, cinnamon, nutmeg and ginger and toss together. Let sit for 2 hours to release the apples’ juices. Remove the apples and pour the juices into a small saucepan. Add the boiled cider to the juices and cook the liquid until reduced to half and thickened, but don’t let it get too thick. Add the flour to the apples and toss to coat well. Preheat the oven to 425F. Roll out the crust and press it into the pie pan. Add the apples to the crust and drizzle with syrup. Roll out the second half of the pie crust and cut into strips. Layer the strips on top, creating a weaving pattern. Bake for 15 minutes, reduce heat to 375F and bake for an additional 45 minutes, or until the crust if golden brown. Let the pie cool for 15 minutes before serving.
