Ingredients

  • 3 or 4 ripe bananas (2 cups)
  • 2 cups of all-purpose flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 cup of butter or margarine (room temperature)
  • 2 cups of white sugar
  • 4 beaten eggs
  • 1 cup of chopped walnuts
  • ½ cup of raisins

Directions

Preheat the oven at 350F. Lightly grease with cooking spray and flour two 9X5 loaf pans.
In a large bowl, mash the ripe bananas.
In the separate bowl, sift together the all-purpose flour, baking soda, and salt.
In a small bowl using an electric mixer, mix together the butter and white sugar. When the mixture is smooth, stir with the mashed bananas.
Add the beaten eggs, chopped walnuts and raisins until it is nicely blended.
Pour the wet ingredients into the dry mixture and fold it together until it is finely blended.
Place the mixture into the loaf pans and spread the mixture evenly.
Bake for 60-70 minutes. To check if the loaves are fully baked, insert the knife into the loaves till the knife comes out clean.
Let the loaves cool down in a cooling rack for 20 minutes.
Wrap the loaves in aluminum foil to seal the moisture. Cool in the refrigerator for 2 hours before serving
