This crockpot beans and spinach soup is the perfect meal to end a long day with. You only need kidney beans, ham, thyme, water, and a variety of vegetables put this delicious and easy dish together.

  • 2 C. kidney beans, soaked, cooked
  • 6 C. water
  • 2 C. chopped smoked ham
  • 1 large yellow onion, chopped
  • 3 ribs celery, thinly sliced
  • 3 carrots, peeled, thinly sliced
  • 1 (14 1/2 oz.) can petite diced tomatoes with green chilies
  • 1/2 tsp. dried thyme
  • 1 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (5 oz.) bag baby spinach

Use nonstick cooking spray to evenly coat your crockpot. Drain the beans and transfer them into your crockpot. Stir in the water, ham, onion, celery, carrots, tomatoes with green chilies, and dried thyme. Cover the soup and cook on low for around 10 hours. When finished, remove two C. of the soup. Puree and then transfer this soup back into the crockpot. Sprinkle the salt and pepper into the soup and then slowly add the spinach. Stir the soup until the spinach is wilted and then serve.
