This ice cream tastes better than anything you can buy at the store! It's creamy, sweet, and requires no cooking. Add in your favorite additives, like chocolate chips, mint flavoring, or caramel if you aren't interested in pecans.

Ingredients

  • 1 C. pecans, chopped coarsely
  • 1/2 C. sugar
  • 2 Tbs. butter
  • 4 C. half-and-half
  • 2 C. brown sugar, packed
  • 1 Tbs. vanilla
  • 4 C. whipping cream
  • ice
  • rock salt

Directions

In a large skillet, combine the pecans, sugar, and butter. Stir constantly for 6 to 8 minutes, or until the sugar melts and turns brown. Remove the pecans from heat and spread them on a buttered baking sheet and separate from clusters. Cool, then break the clusters into small chunks.

In a large bowl, combine the half-and-half, brown sugar, and vanilla. Stir until the sugar dissolves, then stir in the whipping cream. Freeze the cream mixture in a 4-5 qt. ice cream freezer according to the manufacturers directions, using the crushed ice and rock salt. Stir in the pecan mixture.
