  • 2 ½ tsp kosher salt
  • 1 ½ lb medium shrimp, cleaned and peeled
  • 1 C buttermilk
  • 1 ½ C all-purpose flour
  • 1 C cornmeal
  • 4 long French rolls; 8-inch cut horizontally
  • Cajun spice mix
  • Tomato slices
  • Lettuce leaves
  • Mayonnaise

Prepare a pot for deep frying.

Place the buttermilk in a bowl. Then add the flour and cornmeal into one bowl and mix well.

Add the shrimp into a different bowl and toss it with the Cajun spice. Add as much spice as you desire.

When you are ready, dip the seasoned shrimp into the buttermilk then coat well with the flour mixture.

Then, fry the coated shrimp pieces for about 4 minutes per batch. Once the outside looks nice and golden, remove and place it on a paper towel. Repeat till all the shrimp pieces have been fried.

Later, open up the rolls and layer the bottom with some lettuce leaves and tomato slices. Arrange the fried shrimp on top of that and finally add a dollop of mayonnaise. Close the sandwich and there you have it!
