  • 6 ripe tomatoes
  • ½ tsp. salt
  • 2 cloves garlic
  • 1 T. oregano
  • Water

Wash and cut cores out of tomatoes. Boil water in a large pot and drip tomatoes in. leave tomatoes in boiling water for 1 minute before draining the water and transferring tomatoes to ice water bath.

When the tomatoes have cooled off sufficiently peel off the skins and slice tomatoes. Place the sliced tomatoes in the sauce pan with salt, minced garlic and dried oregano. Cover with 1 cup water. Heat over medium heat and let simmer for 5 minutes. Separate into jars and seal tightly. Process if desired and place in the fridge until you are ready to use.
