  • 1 C. carrots, grated
  • 1 C. apples, grated
  • 1 C. raisins
  • 1 C. sugar
  • 3/4 C. butter
  • 1 tsp. baking soda
  • 2 C. flour
  • 1 C. pecans, chopped
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • hard sauce

Mix carrots, apples, raisins, sugar, and butter into margarine.  Sift flour, cinnamon, allspice, and baking soda into carrot mixture.  Stir in nuts.  Turn into greased tube pan or other deep baking pan, filling two-thirds full.  Cover with greased paper and tie with a string.  Place on rack in kettle of boiling water.  Water should come up to halfway around pan.  Cover kettle and steam 1 1/2 hours.  Keep water boiling gently, adding more hot water as needed. 

Serve with: Hard Sauce
