  • 2 Tbs olive oil
  • 1 yellow onion; diced
  • 2 celery stick; diced
  • 6 garlic cloves; sliced
  • 8 C chicken broth
  • 1 ½ lb boneless, skinless chicken breast; cut into small pieces
  • 2 C all-purpose flour
  • 1 Tbs salt
  • 2 Tsp baking powder
  • 1 C milk
  • 3 Tbs unsalted butter
  • 2 carrots; chopped
  • 2 potatoes; diced
  • Pepper

Heat the oil over medium high heat in pot. Add in the onion. Celery, garlic, salt and pepper. Sauté until until onions become tender, then, add in the broth and chicken pieces and bring the mixture to a boil.

Meanwhile, mix the flour, salt and baking powder in a bowl. Make sure there are no clumps. Mix in the milk and butter until the dough begins to come together.

When the chicken is cooked add in the carrots and potatoes and bring the broth to medium heat. Add salt and pepper to taste.

Then, drop 1 Tbs of the prepared dough into the soup and let it cook as the broth simmers. Repeat until all the dumpling dough has been used up.

Close the lid and let the dumplings cook through for 10 minutes.

When it is ready, serve hot.
