It is hard finding an easier side to prepare than this Chinese-inspired chicken fried rice recipe. The rice tastes perfectly alongside the cooked chicken, eggs, and soy sauce.

  • 1 egg
  • 1 T. water
  • 1 T. butter
  • 1 T. vegetable oil
  • 1-2 scallions, chopped
  • 2 cups cooked brown rice, cold
  • 2 T. soy sauce
  • 1 tsp. freshly ground black pepper
  • 1/2 large red bell pepper, diced
  • 1 C. cooked chicken meat, chopped

Take out a small bowl and beat the egg with the water. Use a large skillet to melt the butter over medium-low heat. Add the egg and let it stay flat for about two minutes. When finished, remove from skillet and slice into shreds. Use the same skillet to heat the oil. Add the rice, soy sauce, pepper, red bell pepper, and chicken into the skillet. Stir fry the ingredients for around five minutes. Stir in the egg and transfer the chicken fried rice into a bowl. Mix in the chopped scallions and serve.
