  • 1 ½ lb boneless skinless chicken breasts; cut to small chunks
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbs olive oil
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ cayenne pepper
  • ½ red onion; sliced
  • 2 red peppers; sliced
  • ½ C sliced green olives
  • 1 c diced tomatoes
  • Lettuce leaves
  • Tortilla wraps
  • 1 lime; juiced

Season the chicken chunks with the salt, pepper, cumin, chili powder, garlic powder and cayenne pepper.

Heat the olive oil in a pan and begin cooking the seasoned chicken until it is cooked all the way through.

When the chicken is done, you can begin assembling the taco.

Lay the tortilla wraps on a flat surface and layer with a piece of lettuce, then, add on the diced tomatoes and cooked chicken. Then sprinkle on some onions, red peppers and olives. Drizzle on some lime juice, fold and enjoy!
