  • 1 pkg. instant yeast
  • 1 C. unsweetened almond milk
  • 1/2 C. butter, divided
  • 1/4 tsp. salt
  • 3 C. flour
  • 1/2 T. cinnamon
  • 1/4 plus 1 T. sugar, divided
  • 1/4 C. powdered sugar
  • 1 T. almond milk

In a large saucepan, combine the milk and three tablespoons of butter until melted. Remove and let cool for a few minutes. Transfer to a large bowl and combine with yeast. Let stand for 10 minutes. Sprinkle with one tablespoon of sugar and salt. Add in flour, stirring to form a sticky dough. Transfer to a lightly floured surface and knead for a minute. Place dough ball into a lightly greased bowl, cover, and let stand for one hour. Preheat your oven to 350°F and grease a casserole dish. Roll out dough to a large rectangle on a lightly floured surface and brush with three tablespoons of melted butter. Sprinkle with remaining sugar and cinnamon. Roll up to form a log and cut into two-inch thick slices. Transfer to your prepared baking dish and bake for 25 minutes. Combine powdered sugar with almond milk and drizzle over warm cinnamon rolls before serving.
