You can't enjoy fall without homemade apple cider! This traditional drink is perfect all fall long, so make plenty.

  • 8-10 apples
  • 1/2-1 C. sugar
  • 4 sticks cinnamon
  • 4 Tbs. allspice

Quarter the apples, but don't peel or remove seeds. Put the apples in to a large pot and cover with water. Add the sugar. Wrap the cinnamon sticks and allspice in a doubled up cheese cloth. Tie the top and add this to the water and apples. Bring to a boil and cook for 1 hour uncovered. Check on it frequently. Turn the heat to a simmer and cook for an additional 2 hours. Let cool.

Remove the spices and mash the apples to a pulp. Once the mixture is completely cool, pour it through a strainer into a bowl. When most of the liquid has drained away, put the remainder of the pulp into a doubled up cheese cloth and squeeze over the bowl until no more juice comes out. Serve warm or over ice.
