  • 2 C. heavy whipping cream
  • 1 C. milk
  • ¾ C. sugar
  • 3 T. cinnamon
  • ½ tsp. nutmeg
  • Dash salt
  • 5 egg yolks
  • 12 creme-filled chocolate cookies, chopped

In a large saucepan, combine 1 cup of cream, milk, sugar, and salt. Bring mixture to a simmer. In a bowl, slightly beat eggs and then pour a small amount of your hot cream mixture into eggs, whisking constantly to temper. Add eggs into pot and continue to whisk as mixture begins to thicken. Remove from heat. Pour remaining 1 cup of cream into a large bowl that is placed in an ice bath. Strain cream mixture into cold cream, stir, cover, and let cool. Chill in refrigerator overnight, stir in cinnamon and nutmeg, and proceed to use your ice cream maker according to its instructions. When storing ice cream, layer in crushed cookies.
