This is a tasty and heart healthy bar to eat if you are looking for a quick breakfast. It is made with your choice of any dried fruit and nuts.

  • 1/2 cup of creamy almond butter
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of oats, divided
  • ½ a cup of your choice of dried fruit
  • ½ a cup of hot water

Preheat oven to 325°F. Then, lightly coat a 13x9" pan with nonstick spray and line with parchment paper, leaving an overhang on both long sides. Make sure to spray the paper.
In a food processor, pulse the fruit, water until they become smooth and mixed well. Then add the almond butter, cinnamon, salt, and vanilla and pulse until everything is combined about. Then add the oats and the dried fruit and pulse until everything is combined well.
Transfer the mixture to a prepared pan, pressing down until completely even. Bake the granola until it becomes darkened and firm around the edges, and the center gives just slightly when it is pressed, about 35 minutes. Then transfer the pan to a wire rack and let the granola cool in the pan. Remove the granola using parchment overhang, then cut into 20 bars with a serrated knife.
