Homemade Granola Bars

These fresh and filling bars make a great snack any time of the day.

Ingredients

  • nonstick cooking spray
  • 1 C. nonfat powdered milk
  • 1 C. all-purpose flour
  • 2 C. rolled oats
  • 1 C. oat bran
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 C. packed brown sugar
  • 1 C. chocolate chips
  • 1 C. plain or vanilla yogurt
  • 1 C. reduced fat, crunchy peanut butter
  • 2 tsp. vanilla extract

Directions

Preheat the oven to 350 degrees. Lightly coat a 9x13 inch baking pan and cookie sheet with nonstick spray. Combine the powdered milk, flour, oats, oat bran, cinnamon & salt in a large bowl and mix. Crumble in the brown sugar and break up any lumps. Stir in the chocolate chips. In a separate bowl, mix together the yogurt, peanut butter and vanilla extract. Add the wet mixture to the dry and blend thoroughly. Transfer the mixture to the baking pan and pat down. Bake in the oven for 15 minutes, then cut into long, narrow bars and place the bars on the cookie sheet to bake for another 15 minutes until the edges are golden brown. Remove the bars and cool them. Wrap the bars in cellophane wrap and then aluminum foil to preserve freshness. Add a sticker with your child's name on it to the outside aluminum foil. Save the bars in the refrigerator or freezer. Use for each day of school week.
