Homemade Grapefruit Cake

- ¼ cup Butter
- 1½ cups White Sugar
- 2 Large Eggs
- 1 cup Sour Cream
- ½ cup Canola or Vegetable Oil
- 3 Tbsp Grapefruit Rind, 3 tbsp for garnish
- ¾ cup Grapefruit Juice
- 1½ tsp Vanilla Extract
- ¼ tsp Salt
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2¼ cups All-purpose Flour
- ½ cup White Sugar
- ¼ cup Cinnamon
- ½ cup Chopped Walnuts
- 4 ozs Soften Cream Cheese
- 2 Tbsp Butter
- 1 tsp Vanilla
- ¼ cup Powdered Sugar
Start by preheating oven to 350 degrees.
Now grease and flour bundt cake pan.
Use an electric mixer to blend together butter and sugar.
Add in eggs, sour cream, oil, grapefruit zest and juice, and vanilla to the mix.
Blend for 2 minutes.
In a different bowl, mix salt, soda, powder, and flour
Combine ingredients with the mix in the first bowl and blend well.
Mix white sugar, cinnamon, and chopped walnuts in a small bowl.
Pour 1/2 of the cake batter into bundt pan.
Sprinkle 1/2 sugar and cinnamon mix on top of the batter.
Now pour the remaining batter in bundt pan and sprinkle remaining sugar and cinnamon on top.
Bake for 60-65 mins or until finished.
Mix cream cheese, butter, vanilla, and powdered sugar in a bowl.
Ice the top of the cake with the icing.
