  • 2 large russet potatoes
  • Salt and pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 3 tablespoons butter

Scrub and peel your potatoes, then use a grater and shred the potatoes into a large bowl of water. Pour out the water and then cover the potatoes with more cold water. Drain and then pat with paper towels to get rid of extra moisture.

Melt the butter over medium heat, and add in potatoes and spices. Let the potatoes cook for 5-6 minutes, or until a brown "crust" forms at the bottom. Then stir and cook for another 5-6 minutes until the potatoes are golden brown. Serve immediately and enjoy with all your favorite fixings.
