Limoncello is one of my favorite summer drinks. It's light, refreshing, and perfect for cooling off on a hot summer day. Here's my recipe for a homemade variant.

  • 10 lemons
  • 1 750 mL bottle vodka
  • 3 1/2 C. water
  • 2 1/2 C. sugar (or Splenda)

Remove the peel of the lemons into long strips using a sharp knife or a vegetable peeler. Reserve the remaining lemons for future use, or garnish when serving. 

Using a paring knife, trim he pith from the peel and throw out. Place the peels into a large pitcher and pour the vodka over it. Cover with plastic wrap and allow to sit for 5 days at room temperature. 

Stir the water and sugar (or Splenda) in a large sauce pan over medium heat until the sugar has dissolved. Add to the pitcher of vodka and lemon peels. 

Allow to stand at room temperature overnight. Strain the liqueur through a sieve and discard the peels. Transfer to bottles, if desired. Serve cold. Good for a month.
