  • 2 C. low-fat milk
  • 2 T. butter
  • 2 T. whole-wheat flour
  • 1 1/4 C. shredded Cheddar cheese, divided
  • 1/2 (16-ounce) package elbow macaroni, cooked
  • sea salt and freshly ground black pepper

Preheat your oven to 400 degrees F. Microwave the milk on high for 1 1/2 minutes and then use large skillet to melt the butter over medium-low heat. Whisk in the flour until it reaches a smooth consistency and cook while whisking for about 1 minute. Slowly whisk in the heated milk and cook while whisking for about 5 minutes, which is when the mixture should reach a thick consistency. When ready, whisk in 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 cup cheese. Stir in the cooked elbow macaroni. When all of the ingredients are mixed together, take out a 2-quart lightly greased baking dish and transfer the macaroni mixture inside of it. Top with any remaining cheese and bake in your preheated oven for around 20 minutes, which is when the mac and cheese should be golden. Serve.
