  • 4 cans whole peeled tomatoes, 28 oz.
  • 1/4 cup extra-virgin olive oil
  • 4 Tbs butter
  • 3 Tbs garlic, minced
  • 1 tsp red pepper flakes
  • 1 Tbs dried oregano
  • 1 medium onion, split in half
  • salt and pepper
  • 1/2 cup minced basil leaves
  • 1 lb Linguine, Cooked
  • Fresh parsley

Place the tomatoes in a large bowl and mash them until the pieces are roughly 1/4-1/2 inch thick. In a large sauce pan, heat oil over medium-high heat. Saute garlic and onions until the onions are translucent. Add mashed tomatoes and lower heat. Add oregano, butter, basil, red pepper, and salt and pepper to taste. Let the sauce simmer on low for 20 minutes. Pour over cooked linguine and toss to coat. Top with fresh parsley before serving.
