Homemade Parmesan Pasta Salad

For a tasty cold appetizer on warm days, make this yummy pasta salad with parmesan, salami, penne, olives and more!

Serving Size / Yield

6-8 servings


  • ¼ C. extra virgin olive oil
  • ¼ C. red wine
  • 4 garlic cloves, halved
  • ¼ C. grated parmesan
  • 2 Tbs. dijon mustard
  • 4-5 slices salami
  • 2 C. plum tomatoes
  • ¾ kalamata oives
  • 1 box penne pasta
  • ½ C. chopped parsley
  • salt and pepper to taste

Heat olive oil in a large skillet over medium heat
Add cheese, mustard, garlic, salt and cook for 2-3 minutes, set mixture aside
Chop olives, slice salami, chop tomatoes and combine with mustard mixture
Cook the pasta according to package and reserve 1 C. of pasta water when draining
Rinse pasta with cold water
Add pasta to pan with the salad mixture and toss well. Refrigerate up to one day and serve cold with chopped parsley
