This slow cooker recipe is worth the wait! Yummy red beans and rice is filling and perfect for dinner time.

  • 1 cup dried red beans
  • 7 cups water, divided
  • 2 cups smoked sausage, chopped
  • 1 medium onion, chopped
  • 1-1/2 teaspoons minced garlic
  • 1 teaspoon ground cumin
  • 1 medium tomato, chopped
  • 1 medium green pepper, chopped
  • 1 teaspoon salt
  • 4 cups hot cooked rice

Rinse beans and add them to a slow cooker with 4 cups of water.
Leave overnight.
Drain beans and put back in the slow cooker.
Add in sausage, cumin, onion, garlic, and water.
Cool for 8-10 hours covered.
Add in pepper, salt, and tomato and cook for another 30 minutes.
Serve over rice.
