Homemade Red Beans and Rice
Serving Size / Yield
- 1 cup dried red beans
- 7 cups water, divided
- 2 cups smoked sausage, chopped
- 1 medium onion, chopped
- 1-1/2 teaspoons minced garlic
- 1 teaspoon ground cumin
- 1 medium tomato, chopped
- 1 medium green pepper, chopped
- 1 teaspoon salt
- 4 cups hot cooked rice
Rinse beans and add them to a slow cooker with 4 cups of water.
Drain beans and put back in the slow cooker.
Add in sausage, cumin, onion, garlic, and water.
Cool for 8-10 hours covered.
Add in pepper, salt, and tomato and cook for another 30 minutes.
Serve over rice.
