Ingredients

  • 4 medium tomato, chopped
  • 2 green bell pepper, chopped
  • 2 red bell pepper, chopped
  • ½ C. red onion, chopped
  • 12 springs fresh cilantro, finely chopped
  • 3 jalapeno peppers, chopped
  • ½ tsp. dried oregano leaves
  • 1 large onion, sliced
  • 6-8 garlic cloves, smashed
  • Thyme, add to taste
  • 4 chicken breasts
  • 1 C. white wine
  • Salt
  • Ground black pepper

Directions

For the salsa, combine the tomato, bell peppers, red onion, cilantro, oregano, and jalapeno into a bowl or dish. Stir well. Set in fridge to cool. For the chicken, place the onion, garlic and thyme in the bottom of the crock pot. Season the chicken breasts with salt and pepper to taste. Place chicken on top of vegetables in crock pot, bone side down. Pour in white wine and cook on high for 3 hours or low for 6 hours. Remove chicken, top with salsa, and serve.
