Ingredients

  • 1 cup sugar
  • 1 tablespoon cornstarch
  • ⅔ cup light corn syrup
  • ¼ cup water
  • 1 tbsp. unsalted butter
  • 1⅛ teaspoon glycerin
  • ¼ teaspoon salt
  • ⅛ teaspoon baking soda
  • ¼ - 1 teaspoon extract/flavoring
  • 3 drops food coloring of you choice

Directions

Grease a cookie sheet and set aside.
Mix together the sugar and cornstarch, then stir in the corn syrup, glycerin, water, and salt in a medium to large saucepan. Continue to mix over medium heat until it begins to bubble. Then, insert your candy thermometer. Please note that if you see sugar crystals, brush the sides of the pot with a wet pastry brush.
Continue to cook until the mixture reaches 254 degrees. Then, remove from heat and add your baking soda, flavoring, and food coloring and mix.
On a greased pan, pour the sugar mixture and wait for about 5-10 minutes or until it is close to room temperature.
Then, begin pulling, folding the candy over itself. This process is important and needs vigorous pulling for about 10-15 minutes so that the taffy can be molded properly.
Pull the taffy into a long, thin rope and use buttered kitchen scissors or a buttered knife to cut out your pieces. Wrap them individually in plastic or wax paper.
