Don't order takeout when you're craving fried rice. Instead, make this healthy, flavorful homemade version! If you aren't a fan of shrimp, you can substitute it for chicken or beef.

  • 3 Tbs. soy sauce
  • 1 Tbs. sesame oil
  • 1/2 tsp. ginger powder
  • 1/2 tsp. white pepper
  • 2 Tbs. olive oil
  • 1 lb. medium shrimp, peeled and deveined
  • sea salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and grated
  • 1/2 C. frozen corn
  • 1/2 C. frozen peas
  • 3 C. rice, cooked
  • 2 green onions, sliced

In a bowl, combine the soy sauce, sesame oil, ginger powder, and white pepper with a whisk. Set aside.

In a skillet or wok, heat the oil over medium high heat. Add the shrimp and cook, stirring occasionally for 2 to 3 minutes, or until pink. Season with salt and pepper. Set aside.

Add the garlic and onion to the skillet and cook for 3 to 4 minutes, stirring often. Add the carrots, corn, and peas. Cook for 3 to 4 more minutes, or until the vegetables are tender, stirring constantly. Stir in the cooked rice, green onions, and soy sauce mixture. Cook, stirring constantly, for 2 minutes. Mix in the cooked shrimp and serve immediately.
