  • Crust:
  • 4 C. flour
  • 1 ¾ C. butter flavored shortening
  • 3 T. white sugar
  • 2 tsp. salt
  • 1 egg
  • ½ C. ice water
  • Filling:
  • 2 C. sweet potatoes
  • ½ C. butter
  • ½ C. white sugar
  • ½ C. brown sugar
  • ½ C. evaporated milk
  • 2 eggs
  • ½ tsp. ground nutmeg
  • ½ tsp. ginger
  • 1 T. flour
  • 1 tsp. vanilla extract

Preheat the oven to 350 degrees. For the crust add the flour and shortening into a bowl. Mix it until it resembles breadcrumbs. Add in the sugar and salt. Mix the egg in a separate bowl with the water. Once mixed pour it into the other bowl and combine them. Divide the dough into two balls. Roll out the divided balls on a flour covered cutting board. Place one of the rolled balls into a pie plate and other on a plate. Place it into the refrigerator while you make the filling. For the filling boil the sweet potatoes in a pot of water for 45-50 minutes. When they are done let them cool and remove the skin. Mash the sweet potatoes up. Add in the butter and mix it up. Add the milk, sugars, eggs, nutmeg, cinnamon, vanilla, flour, and ginger. Mix it until smooth. Pour this into the refrigerated crust in the pie plate. With the other piecrust, get a little creative and get a cookie cutter in any shape you’d like. Once this is done place the dough designs anywhere on the pie filling. Let it bake for an hour or until the pie sets.
