This spinach pie recipe is the perfect meal for dinner. With it's buttery, flaky crust and gooey spinach filling, this pie is sure to be a treat.

  • 3 boxes frozen chopped spinach
  • 2 yellow onions, chopped
  • Salt and pepper
  • 1/2 pound crumbled Feta cheese
  • 1/3 cup Parmesan cheese
  • 3 tablespoons plain bread crumbs
  • 6 large eggs, beaten
  • 12 sheets Fillo Pastry Dough, defrosted
  • 1 stick of unsalted butter, melted

Before you start, saute the yellow onions in a skillet and make sure the spinach is defrosted and drained.

Preheat the oven to 375 degrees.
In a bowl, mix together the Parmesan, spinach, feta, and bread crumbs.
Fold in eggs and set aside.
Melt the stick of better.
Unwrap your dough.
Place one layer of dough unto a clean cutting board or counter and brush with melted butter.
Place a second sheet on top and repeat this process 5 more times.
There should be 6 layered sheets
Place dough in a round, greased baking pan.
It will only cover half the pan and let the side overflow.
Repeat the butter and layering process with another 6 sheets.
Cover the other half of the pan.
Add the spinach mixture and fold excess dough toward the center to cover the top of the pie.
Brush the top of the pie with butter.
Cook in the oven for an hour.
