Ingredients

  • 1 qt. tomatoes, canned
  • 1 C. water
  • 2 stalks celery
  • 4 carrots, sliced
  • 1/2 small onion, sliced
  • 1 small green pepper
  • 3 cloves
  • 1/2 tsp. peppercorn
  • 1 Tbs. lemon juice
  • 1 tsp. sugar
  • 2 Tbs. butter
  • 2 Tbs. flour

Directions

Put tomatoes and water into pot. Add celery, onion, carrots, green pepper, cloves and peppercorns. Simmer for 20 minutes. Strain, add lemon juice, sugar, salt and pepper. In separate pan, brown butter, add flour and cook for 10 minutes. Then stir into soup mixture. Bring to boiling point, stirring to thicken slightly.
