Bake your very own crunchy cookie bars in less than an hour!

Ingredients

  • 1 package shortbread cookie mix
  • 2 sticks butter
  • 2 cups of peanuts, chopped
  • 3/4 cup powdered sugar
  • 3 - 5.5 ounce bags soft caramels
  • 2 tablespoons milk or cream
  • 12 ounces milk chocolate, cut into pieces

Directions

To make shortbread, Preheat oven to 300F and place rack in center of oven.
Soften the butter for 10-15 seconds in the microwave, then mix the butter with the shortbread mix in a large bowl with a wooden spoon or by hand until the dough forms.
Roll out the dough then press onto a wire rack lined with parchment paper. Bake for 10-15 minutes. Half-way through baking, turn the baking sheet front-to-back .
To start the caramel filling, place your caramels, milk and salt in a microwaveable bowl and warm for 3-4 minutes, stopping to stir after every minute, until nicely melted.
Glaze the top of the baked cookie with the caramel on a wire rack. Chill them in the freezer to firm up for 3- minutes. Once the caramel has set, cut into small and thin rectangles. (twix shaped)
To make chocolate topping, add milk, heat a small pot with several inches of water. Cover the top with a tightly fitting, heat-proof bowl. Make sure that the steam cannot escape. Also, check to make sure the surface of the water does not touch the bottom of the bowl. Stir Until Melted Completely.
With tongs, dip the bars in the melted chocolate, dip in chopped nut peanuts and place on waxed or parchment paper to set.
Let cool.
