  • 2 C. flour
  • ¾ C. + ½ C. sugar, divided
  • 3 ½ tsp. baking powder
  • 2 eggs, separated
  • 1 ½ C. milk
  • 2 sticks butter, melted
  • 1 tsp. vanilla extract
  • 4 C. pomegranate juice
  • 1 T. lemon juice

Prepare syrup by combining pomegranate juice, ½ cup of sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, as sugar dissolves. Reduce heat to low and cook for 45 minutes until mixture has reduced to 1 ½ cups and is thick. Remove from heat and let cool. Prepare waffle batter by combining flour, remaining sugar, and baking powder in a bowl. In a separate bowl, whisk together egg yolks, milk, melted butter, and vanilla. Stir in dry ingredients. In another bowl, use an electric mixer to beat egg whites until stiff peaks form. Fold into batter. Cook waffles in a greased waffle iron and serve with syrup.
