This soup makes a wonderful, comforting meal chilly fall night! It's quick and easy to make, so you won't spend a lot of time cooking it, but you will spend time savoring every bite!

  • 4 C. chicken broth
  • 3 C. shredded cooked chicken
  • 1 (10 3/4 oz.) can condensed cream of chicken soup
  • 1/4 tsp. poultry seasoning
  • 1 (16 oz.) can refrigerated buttermilk biscuits
  • 2 medium carrots, chopped
  • 3 celery ribs, chopped

In a heavy pot, heat the broth, chicken, soup, and poultry seasoning. Bring it to a boil over medium-high heat, then reduce to low. Cover and simmer for 5 minutes, stirring occasionally. Increase the heat to medium high and return to a boil. On a lightly floured surface, roll each biscuit into 1/8 in. thickness and cut into 1/2 in. wide strips. Drop the strips, one at a time, into the boiling chicken soup. Add the carrots and celery. Reduce the heat to low and cover. Simmer for 15 to 20 minutes, stirring occasionally to prevent the dumplings from sticking together.
