Ingredients
- 1 lb. boneless skinless chicken breasts, cut big strips
- 1 medium onion, chopped
- 1 large red pepper, chopped
- 2 T. butter
- 2 garlic cloves, minced
- 1 T. cornstarch
- 1 can chicken broth
- 2 T. lemon juice
- 1-1/2 cups uncooked instant rice
- 1 C. frozen corn
- slices of fresh lemon, optional

Melt the butter in a large skilled over medium heat. Once melted, add the chicken strips, chopped red pepper, and chopped onion. Cook for 7 minutes or until chicken is no longer pink. Add the garlic cook for one more minute. In a mixing bowl, combine the lemon juice, cornstarch, and chicken broth. Slowly add the liquid mixture into the skillet and bring to a boil. Stir occasionally for 2 minutes, or until the sauce begins to thicken. Stir in instant rice and frozen corn. Remove from heat and cover the skillet. Let the mixture stand for 5-10 minutes while covered or until rice absorbs the liquid before serving. Garnish with freshly sliced lemon if desired.
