  • 2 6-oz Boneless Skinless Chicken Breasts
  • ½ C Pomegranate Molasses
  • ½ C Honey
  • 6 tbs Fresh Lime Juice (four limes)
  • Zest of 2 Limes
  • 1 tsp Fresh Rosemary, chopped
  • ½ tsp Red Pepper Flakes
  • 2 tsp Cornstarch
  • 2 tsp Water
  • Kosher Salt & Freshly Ground Black Pepper, to taste
  • Oil, for grilling

Begin this recipe for honey-pomegranate glazed chicken skewers by pounding your chicken breasts. Lay your chicken on a clean and flat work surface and then cover the breasts with plastic wrap. In short and even strokes, gently but firmly pound the chicken from the center and out toward the sides until the chicken breasts are an even thickness. Slice your chicken lengthwise into ½-inch slices.

Continue by combining the pomegranate molasses, lime juice, zest, rosemary, and red pepper flakes in a small saucepan. Whisk the mixture well to combine and then heat over medium-high. Allow the pot to come to a boil.

In the meantime, whisk together your cornstarch and water in a small bowl. Whisk this mixture into your pomegranate pot and continue cooking for about three minutes or until the glaze has thickened. Taste for salt and pepper and then remove from the heat and let cool completely.

Transfer your chicken to a mixing bowl. Pour about ¾ of the glaze on top and toss to combine. Thread your chicken onto the skewers and then heat your grill to medium-high. Once hot, lightly oil the grates and then set your skewers on to cook for about two minutes on each side. While cooking, occasionally brush the chicken with the remaining amount of glaze. Serve immediately.
