  • 1 C. flour
  • 1 C. quick oats
  • 1 C. brown sugar, divided
  • 1 stick butter, softened
  • 2 (15 oz.) cans pumpkin puree
  • 4 eggs
  • 1 C. milk
  • 1 C. honey
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 2 tsp. vanilla extract
  • Dash salt
  • 1 C. semisweet chocolate chips

Preheat oven to 350 degrees. In a bowl, combine flour, oats, ¼ cup of brown sugar, and butter until crumbly. Set aside about ¼ cup for topping. Press remaining mixture into the bottom of a baking dish and bake for 10 to 15 minutes. In a large bowl, use an electric mixer to combine pumpkin puree, eggs, milk, honey, remaining brown sugar, cinnamon, pumpkin pie spice, vanilla, and salt until smooth. Pour over baked crust, top with remaining crust crumble, and return to the oven for an hour until an inserted knife comes out clean. Top with chocolate chips and serve.
