  • 1 lb. potatoes, sliced into thick chips
  • 4-6 carrots, peeled and sliced into wedges
  • 2 medium parsnips, peeled and chopped
  • 1/4 C. honey
  • 2 T. olive oil,
  • kosher salt and freshly ground black pepper
  • 1 T. thyme

Preheat your oven to 375°F. Arrange potatoes in a large casserole dish and drizzle with olive oil. Season with thyme. In a large bowl, combine carrots and parsnips. Pour in honey, salt, and pepper. Toss to coat. Layer carrot mixture on top of potatoes. Bake for 60 minutes. Let stand for five minutes before serving.
