  • 2 1/2 lb. pumpkin, seeded, sliced, skin on
  • 1 C. dark brown sugar
  • 1 C. walnuts, roughly chopped
  • 2 T. honey
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1/4 tsp. cloves

Preheat your oven to 350°F. In a medium bowl, mix together brown sugar, cinnamon, nutmeg, allspice, and cloves. Generously coat each pumpkin slice in sugar mixture and transfer to a baking sheet. Drizzle with honey and bake for 50 minutes. 10 minutes before your pumpkin is done, toast walnuts in a skillet over medium heat. Stir occasionally until crisp. Remove pumpkin from oven and sprinkle with walnuts. Serve immediately.
