Here's a rustic cake that is considered a tradition in the villages of France. We also added a little more orange zest to bring out an citrus flavor.

Ingredients

  • 1 C. rye flour
  • 1 C. all-purpose flour
  • 1/3 C. granulated sugar
  • 2 tsp. orange zest
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. grated nutmeg
  • 2/3 C. honey
  • 2 eggs, beaten
  • 1/4 C. vegetable oil
  • 1/4 C. water

Preheat the oven to 350 degrees F. Lightly grease an 8-by-8-inch baking pan and set it aside.Stir together the dry ingredients. Gradually add honey, eggs, oil and water. Mix batter until ingredients are incorporated. Pour the honey batter into the prepared pan and bake for 30 to 35 minutes minutes, until the cake tests done 1/2-inch from the center. Cool the honey cake for 10 minutes before serving.
