Honey Sesame Chicken Lettuce Wraps

This lettuce wrapped chicken is the perfect fresh summer meal. The chicken is so easy to make and great to have the next day as leftovers. The flavors are a great copycat of your PF Chang's favorite.

  • 2 lb. chicken breast, boneless skinless
  • 2 cloves garlic
  • 8 large lettuce leaves
  • 1 tsp. onion powder
  • 2 scallions, medium
  • 1/4 C. tomato paste
  • 1/4 C. honey
  • 1/3 C. soy sauce, low-sodium
  • 1 tsp. Sriracha hot chili sauce
  • 1 Tbs. black pepper
  • 2 Tbs. flour
  • 1/2 Tbs. sesame seeds
  • 3 Tbs. rice wine vinegar
  • 1 tsp. sesame oil
  • 5 Tbs. water
  • 1 large carrot, shredded

Place the chicken in the slow cooker and season with black pepper. In a medium bowl, combine soy sauce, honey, tomato paste, vinegar, garlic, one tablespoon water, sesame oil, onion powder and Sriracha hot chili sauce. Pour over chicken and cook on low for three to four hours.
Remove chicken, leaving the sauce in the slow cooker. Shred chicken with two forks; set aside.
In a small bowl, dissolve flour in remaining 1/4 cup water; add to the slow cooker and stir to combine. Cover and cook on high until slightly thickened, about 15 to 20 minutes; return chicken to the slow cooker and mix well.
Serve chicken and sauce in lettuce cups and top with shredded carrots and chopped scallions for garnish.
