  • 1 C. water
  • 2/3 C. granulated white sugar
  • 1/2 C. walnuts
  • ½. C. celery
  • 4 large egg whites
  • 2/3 C. cornstarch
  • 1/4 C. mayonnaise
  • 1 lb. chicken thighs, boneless and skinless
  • 2 T. honey
  • 1 T. canned sweetened condensed milk
  • 2 C. vegetable oil, for frying
  • white rice, prepared

In a small pan, dissolve the sugar in the water at medium heat. Bring the sugar-water to a rolling boil, and add the walnuts and celery. Boil for 2 minutes, then drain and place the walnuts on a cutting board to cool and dry. In a medium bowl, whip the egg whites with a whisk until foamy. Whisk in the cornstarch. Heat the oil in a medium saucepan over medium-high heat. Whisk the egg batter again. Dip the chicken into the batter and fry in the hot oil until golden brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. In a medium serving bowl, stir together the mayonnaise, honey, and sweetened condensed milk. Add the fried chicken and toss to coat with the sauce. Sprinkle the candied walnuts on top. Serve over prepared white rice.
